Blueberry Muffins

INGREDIENTS

2 Ripe Bananas

2 Eggs or 75 gm Paneer (any 1)

1/4 cup Coconut Oil (melted)

2 cups Multigrain flour

2 tbsp Flax Meal (blended flax seeds)

2 tbsp Date Syrup

1 tsp Vanilla essence (for flavour)

1/2 tsp Baking Powder

1/2 tsp Baking Soda

1 tsp Cinnamon

12-15 Blueberries

Pre-heat oven to 350 degrees.

Method

1. Put all ingredients except the blueberries together in a blender and blend until combined.

2. Keeping blueberries in centre, fold and shape like muffins.

3. Using a tablespoon, scoop mixture into muffin tin.

4. Bake for 25 minutes or until toothpick comes our clean and golden brown.
